If you like Bread with your Spaghetti.. Check this Out!

ok.. I must confess.. I am a freak about spaghetti! I love it!! Of course I was on Pintrest.. (insert a DUH here) and I came across a recipe that would forever change my mind about spaghetti. I always make a huge pot of the delicate pasta configuration and I never ever ever.. make it without garlic bread! Making spaghetti without bread is like having a PB&J without the J! It just seems ludicrous! well.. let me just tell you.. this recipe puts the spaghetti and bread all in one! yup.. all in one! Pics and recipe are below.. I didn't follow the recipe exactly because frankly.. I like my spaghetti the way I make it and I wanted to keep things the same.. if it isn't broke.. why try to jack it up and break it :)
You must give this one a try~ I bet you could do it a variety of ways! let me know what you think...
I didn't use Rhodes bread like it calls for... I just used a Pillsbury pizza dough and it worked wonders!

You will need:
  • 1 Loaf Rhodes Bread Dough or 12 Rhodes Dinner Rolls, thawed to room temperature
  • 6 oz spaghetti, cooked
  • 1 cup thick spaghetti sauce
  • 8 oz mozzarella cheese, cut into 1/2 –inch cubes
  • 1 egg white
  • Parmesan cheese
  • Parsley flakes







Say Cheese!!!!

Here is a great and easy appetizer or snack! You can make it in about 10 minutes.. or less! This one is for all you cheese lovers out there! Oh and Fontina isn't cheap so I did half Fontina and half Monterey Jack!
This is Baked Fontina
I made this for Chris and I so I only used a small portion of the ingredients and it was still fantastic!

Ingredients:
  • 1 1/2 lbs Italian fontina, rind removed and cubed into 1-inch pieces
  • 6 cloves garlic, thinly sliced
  • 1 tbsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp Kosher salt
  • 1/2 tsp freshly ground black pepper
Instructions:
  1. Adjust top rack of the oven so that it sits about 5 inches under the broiler unit. Preheat broiler.
  2. Spread cheese out in the bottom of a 12-inch cast iron pan.  Drizzle olive oil over the cheese.  Mix together the garlic and herbs in a small bowl and sprinkle the mixture evenly over the cheese.  Sprinkle salt and pepper over the top of the cheese.
  3. Bake for 6 minutes, until the cheese is bubbly and melted through.  Carefully remove the pan from the oven and set it on a heatproof surface – the pan will be hot!  Serve immediately

Catching Up... As Always!!

I know I have been a terrible blogger latley.. it seems like I use this same sentence everytime I blog! oh well..I have quite a few meals to catch you up on! oh and tons of personal gossip too.. starting with the fact that I GOT A NEW JOB!!! whooo hoooo! I was beginning to think there was no hope for me! God knew exactly what I needed! I start my new position Wednesday August 1st! I will be a Marketing Specialist with the Alliance and eCommerce department at FedEx. Ok.. let's get right to it! I made something the other night that the hubs has literally been requesting ever since! Wait for it...... French Onion Grilled Cheese Sandwiches.. I don't know why I felt the need to capitalize all of those words.. oh well... let me tell you.. it was stupid good! Super Duper Easy too!! This one is a game changer people...here are the ingredients:

French Onion Soup Grilled Cheese

  • 1 Yellow Onion
  • Pinch of Thyme
  • Pinch of Flour
  • Salt & Pepper
  • 2-3 Ounces Concentrated Beef Stock (~30 ml in an ounce)
  • ½-1 Ounce of Sherry
  • ¾-½ cup Gruyere Cheese
  • 2 Slices of French Bread
  • Butter
1. put about 2 Tbsp of butter in a saute pan
2. cut up the onion ( i did a rough chop but made sure the pieces were small)
3. carmelize the onion (this takes about 30 min)
4. shred the cheese
4. butter the bread (i used an italian round loaf and cut slices)
5. put the onion mix and pile the cheese on the insides of the buttered bread
6. get the onion hot at about 350
7. put the sandwiches in a hot pan and brown on both sides
8. finish in the oven so that the cheese gets good and gooey!
9. try not to make yourself miserable by eating 2!!! trust me!!!
